Customize the source email address
You can change the source email address for all emails sent by the software in Configuration » General Settings » Outgoing Email.
The From Email and From Name settings, together with all other email-delivery options, are documented in the User Guide, in the chapter General Settings » Outgoing Email — check it when running a newer software version.
